The Petit Courbu vines, averaging 25-30 years old and covering 5 hectares across different plots, are situated at an altitude of 250 meters. The vines benefit from a south and south-east orientation, thriving on clay-limestone soils.
The grapes are manually harvested and undergo whole-bunch pressing, with only the highest quality press juices selected. Fermentation takes place in 228L oak barrels and 600L demi-muids on fine lees for 30 days. The wine is then aged on lees for 12 months, with 50% in 228L barrels and 50% in 600L demi-muids. Afterward, it undergoes an additional 12 months of ageing in 600L demi-muids. Finally, the wine rests in bottles for 5 years before being released to the market.

Wine Advovate | 93 points“Crafted from 100% Petit Courbu, the 2019 Montus Blanc Sec unwinds in the glass with aromas of citrus oil, dried apricot, spices, smoke, licorice and white fruits, followed by a medium to full-bodied, ample and satiny palate with a fleshy core of fruit and a racy spine of acidity. This wine undergoes fermentation in 228-liter barrels, followed by 30 days on fine lees in 600-liter barrels, then matured for one year in barrels—80% of which are new—and another year in foudre. This is one of the best white wines in the Southwest.”
