Average 50-year-old vines grow on a 45-hectare vineyard with south orientation at 110 metres altitude.
Manual harvest. The grapes undergo fermentation at controlled temperatures (22°C–26°C) for 2 to 5 days, followed by extended maceration for up to 45 days. The wine is then aged first in barrels for 12 months, followed by 24 months in foudres, with 50% of the barrels being new. Bottled after 36 months of ageing and then rested for 2 years in the cellar before being released to the market.
