The name ‘Vaillons’ is taking from its Latin name ‘valis’, meaning ‘small valley’. Its shallow soil allows the grapes to ripen quickly. high concentration of Kimmeridgian limestones at the basement.
With its southeastern exposure, the vines of Chablis 1er Cru Vaillons benefit from the morning sun. The wine undergoes a slow fermentation under optimal conditions for about a month. Malolactic fermentation occurs naturally. Aging takes place in temperature-controlled stainless steel vats on fine lees, imparting roundness and aromatic complexity to the wine.

Colour: Pale yellow with greenish reflections
Nose: White and flinty flowers, citrus fruits and peach
Palate: Round and charming acidity, deep mineral structure.
The Winery
Vincent Wengier is a fourth-generation Chablis winemaker who, with his wife Sophie, has been producing wine under the Domaine Vincent Wengier name since 2018. Established in 1950, the domaine is located in Préhy, a village in the southwest of the Chablis appellation.
The estate manages 26 hectares of vines across four appellations, including the Premier Cru ‘Vaillons.’ The vines benefit from clay-limestone and the region’s Kimmeridgian soils, which impart a mineral backbone to the wines while enhancing their fruitiness and clarity.
The domaine adopted organic agriculture and has been certified organic since 2023. Combined with long, slow fermentations, this approach results in a range of fruit-forward wines with beautiful texture and savoury complexity that keeps you coming back for more.
