Made from a blend of three favourites varieties from the three generations of Lesuffleur’s. The Folletière orchard was planted in 1996 on brown flint and silt soils over clay and chalk bedrock. The Friardel orchard averages 50 years of age and is planted on blue flint and silt soils over chalk bedrock. Production is limited at maximum of 200 bottles per vintage.

WINEMAKING & MATURING

Hand-harvested apples, carefully selected by maturity, are washed and re-sorted before pressing. Fermentation takes place with indigenous yeasts, followed by natural bottle fermentation using the ancestral method with disgorgement. Produced using the traditional keeving process, the cider undergoes 3–4 rackings and gentle filtration before bottling by gravity in April 2021. Aged for 35 months on fine lees in the bottle.
