Vineyard & ViTICULTURE

A special cuvée released only in select vintages. Made exclusively from more than 7 varieties of acidic and sharp apple sourced from two orchards in Friardel and Folletière (an approach generally not permitted under the Pays d’Auge appellation rules). The Folletière orchard was planted in 1996 on brown flint and silt soils over clay and chalk bedrock. The Friardel orchard averages 50 years of age and is planted on blue flint and silt soils over chalk bedrock.

WINEMAKING & MATURING

Hand-harvested apples, carefully selected by maturity, are washed and re-sorted before pressing. Fermentation takes place with indigenous yeasts, followed by natural bottle fermentation using the ancestral method with disgorgement. Produced using the traditional keeving process, the cider undergoes 3–4 rackings and gentle filtration before bottling by gravity in March/April 2020. Aged for 51 months on fine lees in the bottle.

Rooted in generations of cider-making in Normandy, Domaine Lesuffleur is the revival of a family legacy.

Benoît Lesuffleur crafts vinous ciders from heritage apples and pears grown on the clay-flint soils of Pays d’Auge. Benoît cuveés follow a precise logic — acidic varieties for freshness, bittersweet for fullness, tannin-rich for structure — with only the best 10% of the fruit making it into the bottles. Farming has been organic since 2012, incorporating biodynamic practices. His ciders are aged on the lees for 2–3 years on average. This extended ageing and natural production method yields a sparkling, vinous complexity characterized by precision, finesse, and a distinctive tannic structure.
