Vineyard & ViTICULTURE

The fruit comes from a single high-branch orchard planted over 50 years ago by Benoit’s grandfather. More than 12 apple varieties are grown, including 35% sweet and bittersweet apples, 50% bitter apples, and 15% acidic, sharp apples. The orchard sits on blue flint and silt soils, with a clay-flint subsoil over chalk bedrock.

WINEMAKING & MATURING

Hand-harvested apples are selected by maturity, washed, and sorted again before pressing. Fermentation is carried out with indigenous yeasts using the ancestral method, followed by disgorgement. The cider undergoes the keeving method with three to four rackings and light filtration, and is bottled by gravity in January 2021. Aged for 38 months on fine lees.


The Winery

Rooted in generations of cider-making in Normandy, Domaine Lesuffleur is the revival of a family legacy.

Benoît Lesuffleur crafts vinous ciders from heritage apples and pears grown on the clay-flint soils of Pays d’Auge. Benoît cuveés follow a precise logic — acidic varieties for freshness, bittersweet for fullness, tannin-rich for structure — with only the best 10% of the fruit making it into the bottles. Farming has been organic since 2012, incorporating biodynamic practices. His ciders are aged on the lees for 2–3 years on average. This extended ageing and natural production method yields a sparkling, vinous complexity characterized by precision, finesse, and a distinctive tannic structure.
