A terroir unique in the South West consisting of steep slopes with large rounded pebbles on top of fine clay. The vineyards are South/Southwest facing, low yields of around 6 bunches per vine.
Manual harvest. Maceration for 3 to 6 weeks. The wine is aged on lees in barrels for 12 months, 60% of which are new, followed by extended ageing for 24 months in foudre before bottling. The wine rests in bottle for 2 years before market entry.
