Vineyard: Located near the Ciron river below Preignac. The plot is partially deep gravel with silt (Sémillon and Muscadelle) and partially gravel with red sand (Sémillon and Sauvignon).
The grapes are pressed very gently and fermented in stainless steel vats. The wine is then aged for two years in steel and an additional year in bottle before release
The Winery
Chateau les Justices is a value-driven collection of wines crafted by Julie and Xavier Gonet-Medeville. Located in Preignac, just west of the Gironde River. The estate spans eight and a half hectares with vineyards planted to Sauvignon Blanc, Semillon, Muscadelle, Cabernet Sauvignon, and Merlot. The vineyard comprises two distinct plots: one with deep gravel and silt, and the other with gravel and red sand over bedrock. Sustainable farming with organic practices is employed, and much of the work, including the harvest, is done by hand.
The Sauternes wine from Chateau les Justices is a blend of primarily Semillon, with Sauvignon Blanc and Muscadelle. Aged for two years in tank, it is recognized as one of the top non-classified Sauternes, offering lush fruit, balanced sweetness, and complexity that improves with age.
