Vineyards & Vinification

The grapes for Gonet-Medeville Tradition come from the total of three hectares of Champagne Premier Cru vineyards in Bisseuil, Trépail, and Le Mesnil-sur-Aÿ, France.

Hand-harvested. Fermentation takes place 90% in thermoregulated stainless steel vats at cool temperatures to preserve freshness and aromatics. About 10% is vinified in old oak casks for additional texture and complexity.

No malolactic fermentation. The wines undergo extended lees ageing for about 24months.
